Let's say I notified a property manager that as a tenant I'm withholding rent because of a breach of contract. He starts a collection process: it goes into credit reports, just like that? I live in Florida.

Non-payment can be reported to a credit bureau, you have a right in the U.S. to file an explanation with it or to have it corrected if what is said isn't true. If the statement is that you haven't paid rent and you haven't, it is true.
